
Do Ahead Mashed Potatoes

Ingredients:
9 Large potatoes, peeled/cut into chunks
1 cup sour cream
6 ounces cream cheese, room temperature
1/2 cup butter, room temperature
1/2 cup milk
1 Tablespoon onion salt
Salt/Pepper to taste
Instructions:
Lightly butter 9 X 14 baking dish. Place potatoes in a large pot and cover with cold water. Boil about 30 minutes until tender. Drain. Using an electric mixer, mash potatoes in a large bowl. Mix in sour cream, cream cheese, 5 Tablespoons butter, milk and onion salt. Season with salt/pepper. Put potato mixture in baking dish. (Can be prepared 2 days ahead. Cover and Refrigerate). Preheat oven to 400 degrees. Slice remaining 3 Tablespoons butter. Place on top of potato mixture. Bake for 30 minutes.
