Lebkuchen

Ingredients:

3 cups flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp allspice
1/2 cup raisins
3/4 cup brown sugar
1/2 cup honey
1/2 cup molasses
1 TBSP lemon juice
1 egg slightly beaten
 

Instructions:

In large bowl, sift together flour, soda and spices. Stir in the raisins. In smaller bowl, combine egg, sugar, honey, molasses and lemon juice. Mix well. Stir into flour mixture. With spatula and hands wet with cold water to prevent sticking, put dough in well greased and floured jelly roll pan or similar pan. Flatten dough to about 1/8 “ thick. May need to use wet, cold hand to press into pan. Bake in 400 degree preheated oven for 12-15 minutes. Watch closely so they do not burn but are firm to the touch. Remove from oven and immediately brush with thin icing made with water and powdered sugar. Cut while warm. Remove from pan, cover tightly. Enjoy!
